Opened in 2002 by Chef Timothy Widrick, Edge Restaurant took the Lehigh Valley by storm, impressing its customers with fresh, unique, New American cuisine, and top-notch customer service. Chef Widrick and his family took pride in serving the Lehigh Valley at Edge Restaurant, using their passion for food, great service, and great drinks to bring family and community together.

Searching for years to expand to another location, ownership finally saw their opportunity in 2020 and opened SURV Restaurant in Forks Township. The birth of SURV also gave birth to Lotus Restaurant Group, an ownership group comprised of Chef Timothy Widrick, Karen Widrick, Spencer Cobb, and Carissa Cobb.
